Tonight we have grilled Mahi Mahi and fresh asparagus. The sauce is an interesting combination of butter, minced garlic, capers, chopped pepperoncinis, and a splash of Szechuan seasoning, and the asparagus was lightly sauted in butter, garlic, and lemon juice. YUM!

and for this evening, a grilled Tilapia fillet accompanied by steamed cauliflower. The fish was marinated in lemon juice and soy, the cauliflower smothered in a cheese sauce. Mmmmmm...
Okay, by popular demand... A serving of Doe's famous Veggie Lasagna - with garlic bread, of course. The Lasagna is a perfect melding of fresh spinach, mushrooms, shredded carrots, zucchini, garlic, grated parmesan, mozzarella, and cottage cheeses. Absolutely the best I've ever tasted!
Today we'll change it up a bit and show the brunch dish. An open-face breakfast 'sandwich', with a sunny-side-up egg atop thin-sliced deli ham and pepper jack on whole grain toast. Seasoned with a tiny bit of sea salt, 4-pepper blend, and basil. YUM!
Tonight's delight: Something I call a 'Southwest Spinach Salad', with spinach, olives, peppers, and feta. The tuna 'topping' is mixed with pepperoncinis, minced dill pickle, and chipotle. Dressing is Ken's Greek
Slices of grilled chicken breast that marinated in lemon juice and balsamic overnight, and broiled zucchini with a roasted sesame garlic and fresh grated Asiago.
and for today we had a lovely Teriyaki Salmon, grilled of course, with a serving of steamed fresh green beans and squash topped with a toasted sesame dressing and a scoop of rice au gratin. Yum!
