Tonight was a grilled chicken breast with steamed broccoli and squash. The chicken had been marinated in orange sauce, lemon juice, and garlic and rubbed with a mixture of lemon zest, a freshly ground pepper blend, sea salt, paprika, and basil. The veggies were tossed with a sun-dried tomato vinagrette, fresh ground pepper, and sea salt. Cooking time was about 12 minutes.
Surprisingly easy, really delicious, and pretty darn healthy!
4oz Ahi Tuna steak, marinated for a few hours in soy and sesame oil, then seared for about 3 minutes on each side. Accompanied by 1/2" thick zucchini rounds, marinated in EVO with herbs, with thin slices of baby bell peppers on top, broiled for about 15 minutes. |
