This salad takes only a few minutes to make, is filling and quite refreshing, and counts for only 120 calories (3 WW points). Serves 2.
Ingredients:
Desired amount of Baby Spinach leaves, chopped to a size of your choosing
1/3 cup diced Green Bell Pepper
1/4 cup thinly sliced Red Onion
1/2 large Beefsteak tomato, sliced thin
6 oz Cooked Baby Shrimp
4 Tbsp Low-Fat Feta
4 Tbsp Litehouse OPA Greek Yogurt/Feta dressing
1 Tbsp Tarragon flakes
Himalayan Pink Salt Crystals and Fresh Ground Pepper to taste
Preparation:
Put the chopped spinach, Bell Pepper, Red Onion, and Tarragon in a bowl
Toss with 2 Tbsp of the Litehouse OPA dressing
Scoop onto plates
Add 3 oz. Cooked Baby Shrimp to each salad
Arrange tomato slices around the Shrimp
Sprinkle 2 Tbsp of Feta on each salad
Add 1 Tbsp of Litehouse OPA to top off each salad
Serve and enjoy!
