Ingredients:
2 sausages ( we had grilled sausages on hand) of your choice. We used 1 Chicken, Sun-Dried Tomato & Kale sausage (Aidell's), and 3/4 of a Pork & Pineapple sausage. Slice sausages lengthwise into quarters.
1 LARGE Zucchini squash, ends cut off, sliced in four pieces lengthwise.
1 package Rice-a-Roni Red Beans and Rice
1 Tbsp butter
1 Tbsp flavor-infused EVO (I used 1/2 Tuscan Herb and 1/2 Herb de Provence)
1 Tbsp Italian herbs
2 tsp Cilantro flakes
1 tsp Cumin powder
Preparation:
Prepare Rice-a-Roni per the package directions
Pre-heat stove-top grill to 375 degrees
Put butter, EVO, Italian herbs and Cilantro in a small bowl and microwave to melt the butter
Baste both sides of the Zucchini slices with seasoned butter/EVO blend
Place the Zucchini and sausage slices on the grill and cook for about 10 minutes on each side
Add the Cumin to the Rice-a-Roni about 5 minutes before serving, stirring thoroughly
When the Rice is ready, spoon onto plates, drape two Zucchini slices on each plate, place the sausage slices on top, add Salt and Pepper to taste and EAT!
