Seared Ahi Tuna with a rice pilaf, accompanied by a zesty salad of baby spinach, red leaf lettuce, red bell pepper, a fantastic cucumber, and grape tomatoes with a sprinkle of Feta. The dressing is a home-made vinaigrette of Pomegranate Balsamic, sweet Thai Chili, and a variety of fresh herbs. The salad itself was 'zero points' for you WW folks. The entire meal was only six points - and incredible. (about 250 calories)

Sunny-side up tops a quinoa/kale/zucchini/Canadian Bacon 'hash'
. Less than 300 calories (7 WW points) When fresh asparagus is good (and doesn't cost an arm and a leg), ya gotta do it. This is grilled asparagus, the spears having been seared on a cast-iron grill pan after a couple of hours in a garlic oil/butter/parmesan/italian spice mixture. Then there are the chicken and kale dumplings, stir-fried in hemp oil with fresh squash, bell pepper, and red onion seasoned with Chinese 5-Spice and Tarragon. About 300 calories, and delicious! 8 WW points.
Took some slices of a TriTip roast I smoked for Memorial Day, sliced it up bite-sized, and sauteed it with the veggies I had done the same day. A bed of spinach was topped with a tossed blend of yellow zucchini, sun-dried sweet red peppers, sliced young anaheim pepper, diced shallots, and some kind of funny-looking (but delicious) cucumber, a dash of fresh cillantro, and a splash of TJ's low-fat Creamy Cillantro dressing. Then slices of fresh tomato were distributed on top, the Tri Trip saute spooned on, slices of avocado arranged, then another drizzle of the dressing. This was OH... MY... GAWD delicious, and given that neither of us could actually finish what was on our plate (the rest is in a container in the fridge), it's somewhere around 1000 calories and less than 10 'WW' points (about 400 calories!)
Learning to use a spicy sausage as a 'spice' in an otherwise pure-veggie dish. Three kinds of peppers, two kinds of squash, tossed with tarragon and a sweet Thai chili sauce, with crumbled Romano. Then a quick sizzle in a splash of Garlic oil, served over a half-cup of rice pilaf, then drizzled with Caesar. The after-flavors are splendid!
I've often enjoyed crispy tofu at various asian restaurants, usually served with curry dishes; but I'd never attempted to prepare it myself. Finally decided to do it.
My first attempt at Tofu was a big hit! Pan fried, with bell pepper, red onion, and yellow zucchini, served over a brown rice medley and topped with a spicy peanut vinaigrette. Spinach salad with mushrooms, garbanzos, tomato, queso fresco cheese, and (of course) avocado. Fresh homemade dressing prepared with avocado oil, orange muskat champagne vinegar, a squirt of hot sauce, and fresh basil and oregano, with some fresh ground Himalayan salt and a bit of fresh grated Romano. YUM!
