Doe's Crab and Guacamole Melt
This recipe makes 2 servings. About 240 calories (6 WW points) each
Ingredients:
2/3 cup Chicken of the Sea Premium Crabmeat
2 each Whole Wheat Sandwich Thins
1 teaspoon minced Garlic
2 tablespoons Good Foods Chunky Guacamole
2 teaspoons Salad Olives, lightly chopped
2 ea Peperoncini - finely chopped
2 teaspoons prepared mustard (your favorite will do)
2 slices Jarlsberg Lite Swiss Cheese
2 each tomato slices
Dust with Pink Himalayan salt
Filling Preparation:
Combine crabmeat, garlic, guacamole, chopped salad olives and 1 teaspoon brown mustard. Mix until well blended.
Cut the stem off each peperoncini, squeeze juice into the above mixture, then finely chop and add to the mixture - blend well.
Sandwich prep:
Open the sandwich thins and add remaining mustard to the the top of the bun.
On the bottom of the bun, spread 1/4 of the crab meat mixture, then place the swiss cheese, add another 1/4 of crab mixture, dust with the salt and top with the tomato slice. Dust one more time with salt and add the top bun.
Repeat for the second serving.
Cooking:
Place in toaster over (we put foil on a shallow baking pan) and broil for 10 to 15 minutes or until brown. If you'd like both sides 'crispy', flip half way through the cooking cycle.
Serve and enjoy!
