My first attempt at Tofu was a big hit!
Pan fried, with bell pepper, red onion, and yellow zucchini, served over a brown rice medley and topped with a spicy peanut vinaigrette.
I've often enjoyed crispy tofu at various asian restaurants, usually served with curry dishes; but I'd never attempted to prepare it myself. Finally decided to do it.

Spinach salad with mushrooms, garbanzos, tomato, queso fresco cheese, and (of course) avocado. Fresh homemade dressing prepared with avocado oil, orange muskat champagne vinegar, a squirt of hot sauce, and fresh basil and oregano, with some fresh ground Himalayan salt and a bit of fresh grated Romano. YUM!
Weight Watchers - about 4 points The tortillas are whole grain, the filling was herb rice and sauteed summer squash, zucchini, baby sweet peppers, mushrooms, and red onion. Seasoned with butter and garlic, with a dash of turmeric of course.
A salad of Baby Spinach, sliced cucumber and tomato, with chopped green onion and mushroom, then topped with refried beans and fresh avocado then dusted with a 'mexican' cheese blend.
This evening's culinary creation... large (HUGE, actually) portabella mushroom, stuffed with a mix of fresh peppers, zucchini, red onion, tomato, and (yesRon) bacon, topped with fresh grated romano cheese. Broiled and served on a bed of rice pilaf. YUM!
There is just no substitute for fresh ingredients! If you can grow your own, so much the better. These three beauties were taken from our garden this morning, and man are they fantastic!
This evening's side dish. Zucchini harvested this afternoon, sliced thin, covered with freshly harvested dill, basil, and oregano, then topped with sliced Roma tomatoes and Parmesan and Mozzarella cheeses then grilled lightly. YUM!
Okay, by popular demand... A serving of Doe's famous Veggie Lasagna - with garlic bread, of course. The Lasagna is a perfect melding of fresh spinach, mushrooms, shredded carrots, zucchini, garlic, grated parmesan, mozzarella, and cottage cheeses. Absolutely the best I've ever tasted!
