Okay, so first I'll apologize because I didn't catch a picture of this one - and I promise I'll do this again very soon with the usual picture. But I wanted you all to know about this delicious option for scrambled eggs, whether you wrap them in a burrito or not.
The idea here is to provide a much healthier alternative to the usual fast food breakfast burrito. There isn't any meat in this one; but you could add a healthy choice and be just fine.
This recipe serves 2, at about 200 calories (5 WW points)
Ingredients:
- 1 whole egg
- 3 egg whites
- 1/3 cup diced crookneck squash (or zucchini)
- 1/3 cup diced Hungarian sweet pepper
- 1 tsp Turmeric
- 1 tsp Dijon mustard
- 1 Tbsp Hummus
- 1 Tbsp Cilantro flakes
- 1 Tbsp shredded Queso Quesadilla cheese
- 1 Tbsp Mexican Cheese blend
- 2 10" flour tortillas (or your favorite)
- 4 Tbsp your favorite Salsa
- Himalayan Pink Crystal salt (or Sea Salt) to taste
- Fresh ground pepper to taste
- 1/2 Tbsp your favorite flavor EVO
Preparation and Cooking:
- Heat the oil in a medium skillet over low heat
- Add diced squash and peppers, and sprinkle the Turmeric on
- Cover the pan and let things simmer
While the simmer is happening...
- Put whole egg, egg whites, Dijon mustard and Hummus in a bowl, whisk until fully blended
- Place each tortilla on it's own plate
- Sprinkle 1 Tbsp of Queso Quesadilla on each tortilla, forming a 'line' across the diameter
- Spoon 1 Tbsp of Salsa down the cheese line on each tortilla
- Add the egg blend to the skillet, leaving the heat low, and cook. You can stir if you like; but I usually don't.
- When the eggs are done, spoon an equal portion onto each tortilla
- Roll 'em up
- Spoon 1 Tbsp of the Salsa down the length of each burrito
- Sprinkle 1 Tbsp of Mexican Cheese blend down the length of each burrito
- Microwave each burrito for 25 seconds or so to melt the topping cheese
