Ingredients:
4 Tbsp Ron's Southwestern Island Dressing
1 cup Frijoles (refried beans)
2 thin slices of Red Onion, diced fine.
2 cups loosely chopped Romaine lettuce
1/4 cup diced Green Onion
1/2 cup diced Celery
1 tsp McCormick Taco seasoning
1 medium-size Golden Jubilee tomato, halved and sliced thin
1/2 cup Shredded Mexican cheese blend
Preparation:
Combine Frijoles and Red Onion in a microwave-safe bowl and warm for about 2 minutes on power 7.
Combine Romaine, Celery, Green Onion, and Taco seasoning in a salad bowl and toss with 2 Tbsp of dressing
Spoon the salad veggies onto 2 plates.
Top with 1/2 cup (each) of the Frijole/Red Onion
Place tomato slices around the beans
Sprinkle 1/4 cup (each) of the shredded cheese
Drizzle an additional Tbsp of dressing on each salad.
Serve and ENJOY!
