Okay, well Malcolm is gonna love this one. Fresh Kale, squash, cucumber, mushroom, grated carrots and peach, with Feta and avocado slices. The dressing is garlic, lemon juice, a soy/citrus blend and herbs.
It was delicious, and only 200 calories (5 WW points) My baby begged me for this one. Grilled chicken and broccoli, sizzled with seasonings in hemp oil, served with a homemade Alfredo sauce over spinach/mozzarella ravioli. The Alfredo began with a tbsp of 'real' Alfredo, blended with 2 tbsp of non-fat Greek Yogurt, lemon juice, and herbs. Surprisingly healthy, and quite delicious. Only about 200 calories (5 WW points)
Chicken/Kale and Pork/Pineapple sausage, three different peppers, a green chile, mushrooms, and cherry tomatoes over herb rice. I'm tellin' ya, it had a real ZING! Only about 250 calories! (about 6 WW points)
This one is a no-brainer. Steelhead trout gently marinated in garlic and a soy-citrus blend, served with a brown rice and yellow crook-neck squash with a lemon juice and herb dressing. About 350 calories (8 WW points)
Large, fresh zucchini, stuffed with a mix of mushrooms, green chiles, squash, and queso fresco cheese with fresh grape tomatoes on top along with a sprinkle of fresh grated romano and broiled. Served with a 'side' of chilled shrimp in home-made honey mustard. At serving time a drizzle of cilantro dressing was added atop the squash. VERY low in fat, about 200 calories (5 WW points)
